Crispy Rice Cakes

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the washed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until water is absorbed.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl. Gradually drizzle the vinegar mixture over the hot rice, gently folding it in with a spatula. Let the rice cool to room temperature.

Shape and Fry Rice Cakes
Once cooled, take small portions of the rice and shape them into small cakes (about 2 inches in diameter). Heat the vegetable oil in a frying pan over medium-high heat. Fry the rice cakes in batches until they are golden brown and crispy on both sides, about 3-4 minutes per side. Drain on paper towels.

Marinate the Tuna
Cut the sushi-grade tuna into small cubes. In a bowl, combine the soy sauce, yuzu juice, sesame oil, and chopped green onions. Add the tuna cubes and gently toss to coat. Cover and refrigerate for about 15-20 minutes to marinate.

Prepare Chili Aioli
In a small bowl, whisk together the mayonnaise, Sriracha, minced garlic, lemon juice, and salt until smooth and well combined. Adjust the spiciness to taste by adding more Sriracha if desired.
Assembly

Assemble the Dish
Place a crispy rice cake on a serving plate. Top with a spoonful of the marinated tuna. Drizzle with chili aioli on top. Repeat with remaining rice cakes and tuna. Serve immediately.
