Preparation of Sushi Rice

Cook Sushi Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook in a rice cooker or pot with 2.5 cups of water. Once cooked, let it sit covered for 10 minutes.

Season the Rice
In a small saucepan, combine 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt. Heat gently until dissolved. Mix this seasoning into the rice and let it cool.
Prepare Spicy Tuna

Make Spicy Tuna Mix
In a bowl, combine 150g of sashimi-grade tuna (finely chopped), 1 tablespoon of sriracha sauce, 1 tablespoon of mayonnaise, and 1 tablespoon of chopped green onion. Mix well and set aside.
Assemble the Roll

Prepare Nori and Fill
Place a sheet of nori on a bamboo sushi mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Lay down 2-3 pieces of tempura shrimp, 1 crab stick, slices of avocado, a layer of spicy tuna mix, and blue crab.

Roll the Sushi
Carefully lift the edge of the bamboo mat and start rolling away from you, pressing gently but firmly to create a tight roll. Use the border of nori to seal the roll.
Add Crunchy Topping

Prepare Crunchies
In a skillet, heat 2 tablespoons of sesame oil over medium heat. Add 1 cup of panko breadcrumbs and toast until golden brown, stirring frequently. Let cool.
Slice and Serve

Slice the Roll
Using a sharp knife, wet the blade and slice the roll into 8 equal pieces. Sprinkle the toasted panko crunchies over the top for added texture.

Serve
Arrange the sushi rolls on a plate and serve with soy sauce, pickled ginger, and wasabi on the side.
