Garlic Marinade

Prepare the Marinade
In a mixing bowl, combine minced garlic, olive oil, lemon juice, chopped thyme, salt, and black pepper. Whisk together until well blended.

Marinate the Tuna
Place the albacore tuna steaks in a shallow dish and pour the garlic marinade over them. Cover and refrigerate for at least 30 minutes, allowing the flavors to infuse.

Citrus Soy Sauce

Make the Sauce
In a small bowl, whisk together the soy sauce, orange juice, lime juice, honey, and sesame oil until well combined. Set aside.
Cooking the Tuna

Char the Tuna
Preheat a grill or grill pan over high heat. Remove the tuna steaks from the marinade, allowing excess to drip off. Grill the steaks for about 2-3 minutes per side for medium-rare, or until desired doneness.
Assembly

Plate the Dish
Place the grilled albacore tuna on a serving platter. Drizzle with the citrus soy sauce, and top with crispy onions, chopped scallions, and a sprinkle of orange zest. Serve immediately.
