Mango Chili Lime Sauce

Prepare Calamari

Clean and Prepare Calamari
Rinse the calamari rings under cold water and pat them dry with a paper towel.

Season Calamari
In a mixing bowl, combine calamari rings and anise salt, tossing them to ensure even coating.
Cook Calamari

Heat Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry Calamari
Carefully add the seasoned calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown.

Drain and Set Aside
Using a slotted spoon, remove the calamari from the oil and place them on a paper towel to drain excess oil.
Prepare Sweet Peppers and Cilantro

Chop Sweet Peppers
Remove the stems and seeds from the sweet peppers and chop them into small pieces.

Chop Fresh Cilantro
Finely chop the fresh cilantro, ensuring to remove any thick stems.
Prepare Mango Chili Lime Sauce

Combine Ingredients
In a blender, add diced mango, lime juice, chili powder, honey, and salt. Blend until smooth.

Taste the sauce and adjust the salt or lime juice as necessary.
Assemble and Serve

On a serving plate, arrange the fried calamari rings, garnishing with chopped sweet peppers and cilantro.
