Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water and remove the skin. Cut into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Cooking the Calamari

Coat the Calamari
Dip the calamari rings into the wet mixture, then dredge in the flour mixture to coat evenly.

Fry the Calamari
Carefully place the coated calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes until golden brown.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Keep warm until all calamari are cooked.

In a medium bowl, combine mayonnaise, ketchup, lemon juice, hot sauce, and garlic powder. Whisk until well blended.
