Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine with 2.5 cups of water in a rice cooker and cook according to the manufacturer's instructions.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow the rice to cool to room temperature.

Prepare Filling

    Prepare Avocado and Cucumber

    Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork and add lemon juice and salt. Set aside. Cut the cucumber into thin strips.

    Mix Crab Filling

    In another bowl, combine the blue crab meat and cream cheese. Mix until well combined and season with additional salt if desired.

Assemble Rolls

    Lay Out Nori

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.

    Spread Rice

    Wet your hands with water to prevent sticking. Take about ½ cup of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top clear.

    Add Fillings

    In the center of the rice, place a line of the crab mixture, followed by the mashed avocado and cucumber strips.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to create a tight roll. Seal the edge with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top and serve with soy sauce or your favorite dipping sauce.
