Method

Cooking the Rice

    Rinse the Sushi Rice

    Place the sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let it sit, covered, for 10 minutes.

Pickling the Cabbage

    Prepare the Pickling Liquid

    In a bowl, whisk together the rice vinegar, sugar, and salt until the sugar is dissolved.

    Pickle the Cabbage

    Place the sliced red cabbage in a clean jar or bowl and pour the pickling liquid over it. Ensure the cabbage is fully submerged. Let it sit for at least 30 minutes, or refrigerate for up to 24 hours for a stronger flavor.

Cooking the Ahi Tuna

    Prepare the Spice Mix

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

    Rub the spice mix generously on both sides of the ahi tuna steaks.

    In a skillet over medium-high heat, add olive oil. Once hot, add the seasoned tuna steaks and sear for 1-2 minutes on each side for medium-rare, adjusting time for desired doneness. Remove from skillet and let rest.

    In a bowl, place a generous serving of sticky rice as the base.
