Preparing the Ribs

    Season the Ribs

    In a small bowl, mix together salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the baby back ribs, making sure to cover all sides. Let the ribs sit at room temperature for 30 minutes to allow the seasoning to penetrate the meat.

    Preheat the Oven

    Preheat your oven to 300°F (150°C). This low and slow cooking method will help the ribs become tender.

Making the Ponzu BBQ Sauce

    Combine Ingredients

    In a medium saucepan, combine ponzu sauce, brown sugar, honey, soy sauce, sesame oil, grated ginger, minced garlic, and chopped scallions. Stir well to incorporate all ingredients.

    Simmer the Sauce

    Place the saucepan over medium heat and bring the sauce to a gentle simmer. Cook for about 10 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.

Cooking the Ribs

    Bake the Ribs

    Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover the ribs with another piece of foil and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender and the meat pulls away from the bone easily.

    Glaze the Ribs

    Remove the ribs from the oven and discard the top layer of foil. Brush the ponzu BBQ sauce generously over the ribs, reserving some for serving. Return the ribs to the oven and bake uncovered for an additional 20-30 minutes, or until the sauce is caramelized.

Serving

    Slice and Serve

    Once the ribs are done, remove them from the oven and let them rest for a few minutes. Slice between the bones to separate the ribs. Serve warm with the remaining ponzu BBQ sauce on the side.
