Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly before mixing in rice vinegar.

Assemble Sushirritos
Lay a nori sheet on a bamboo mat or clean surface. Spread 1/2 cup of sushi rice over the nori, leaving a 1-inch border at the top. Layer with cucumber, carrot, avocado, and shrimp or crab meat. Drizzle with soy sauce and a touch of wasabi. Sprinkle sesame seeds over the top.

Roll the Sushirrito
Starting from the bottom, carefully roll the nori over the filling, applying gentle pressure to keep the roll tight. Once rolled, use a sharp knife to cut the sushirrito in half. Repeat with remaining ingredients.

Serve the sushirritos with pickled ginger on the side and additional soy sauce for dipping.

In a large bowl, combine mixed greens, sliced red bell pepper, shredded carrots, and sliced cucumber.
