Create the Root Beer Base
In a large pot, combine sassafras root, sarsaparilla root, wintergreen leaves, and 8 cups of water. Bring to a boil and then reduce the heat. Let it simmer for about 30 minutes.

After simmering, strain the mixture through a fine mesh sieve or cheesecloth to remove the solids. You should have a flavorful liquid.

Stir in 2 cups of sugar until fully dissolved. Allow the mixture to cool down to room temperature. Once cooled, sprinkle 1 tsp of yeast over the surface and let it sit for about 15 minutes.

Cover the pot with a clean cloth and let it sit at room temperature for 24 to 48 hours. This will allow the yeast to carbonate the root beer.
