Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue mixing until creamy. Add the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed just until incorporated. Do not overmix.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour with the door ajar.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

Add Toppings
Before serving, drizzle the caramel sauce over the top of the cheesecake. Melt the semi-sweet chocolate chips in a microwave or double boiler, then drizzle over the caramel. Sprinkle the toasted pecans on top.
