1. Cook the Pasta
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
2. Prepare Pancetta
In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes.
3. Make the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
4. Combine Everything
Add the hot drained spaghetti to the skillet with pancetta. Remove from heat and quickly pour in the egg and cheese mixture, stirring vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
5. Serve
Season with additional salt and pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
