Gyro Preparation

Prepare the Meat
In a large bowl, mix together the ground beef and ground lamb. Add minced garlic, ground cumin, ground coriander, salt, black pepper, and olive oil. Mix thoroughly until well combined.

Shape and Chill
Shape the meat mixture into a loaf or round shape. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour to firm up.

Cook the Meat
Preheat your rotisserie grill or oven to medium-high heat. Cook the meat on a rotisserie spit or on a baking tray in the oven until the internal temperature reaches 160°F (70°C), approximately 30-40 minutes.

Slice the Meat
Once cooked, remove from heat and let rest for 10 minutes. Slice thinly against the grain.

Assemble the Gyros
Warm the pita bread. Layer sliced meat, shredded romaine lettuce, sliced red onion, and tzatziki sauce on top of each pita.

Serve
Wrap the pita around the fillings, serve immediately, and enjoy your homemade gyros!
