    Prepare the Falafel Mixture

    Soak the garbanzo beans overnight in water. Drain and rinse the beans, then combine them with cracked wheat, onion, garlic, cumin, coriander, salt, black pepper, and parsley in a food processor. Blend until a coarse mixture forms.

    Form the Falafel Balls

    Take small portions of the mixture and shape them into small balls or patties.

    Fry the Falafel

    Heat vegetable oil in a deep frying pan over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Assemble the Wrap

    Place a few pieces of lettuce in the middle of each pita or wrap, add the fried falafel, and drizzle with zaziki sauce. Top with additional chopped onions if desired.

    Serve

    Wrap the pita around the fillings and serve warm.
