    Prepare the Nut Filling

    In a food processor, combine walnuts, pistachios, sugar, and ground cinnamon. Pulse until finely chopped. Set aside.

    Prepare the Phyllo

    Preheat the oven to 350°F (175°C). Melt the butter and brush a 9x13 inch baking dish with some of the melted butter. Layer 10 sheets of phyllo dough in the dish, brushing each sheet with butter before adding the next.

    Layer the Filling

    Spread half of the nut mixture over the phyllo layers. Add 5 more sheets of phyllo, buttering each layer. Then, add the remaining nut mixture and top with another 10 sheets of phyllo, again buttering each sheet.

    Cut and Bake

    Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for 45-50 minutes, or until golden brown.

    Make the Syrup

    While the baklava is baking, combine honey and water in a saucepan. Bring to a boil and let simmer for about 10 minutes. Remove from heat and let cool.

    Soak the Baklava

    Once the baklava is done baking, immediately pour the cooled syrup over the hot baklava. Allow it to soak for at least 4 hours, preferably overnight, before serving.
