Preparation of Zaziki Sauce

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture. Set aside.

    Make the Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well until smooth. Refrigerate for at least 30 minutes to allow flavors to meld.

Cooking the Shrimp

    Sauté the Vegetables

    Chop the onion and bell pepper into small pieces. In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes, or until softened.

    Cook the Shrimp

    Add the baby rock shrimp to the skillet with the sautéed vegetables. Cook for an additional 3-5 minutes until the shrimp are pink and cooked through. Season with salt and black pepper to taste.

Assembly

    Wrap the Shrimp Mixture

    Take a lettuce leaf and spoon some of the shrimp mixture onto the center. Drizzle with the chilled zaziki sauce.

    Serve

    Roll the lettuce leaf around the shrimp mixture to form a wrap. Serve immediately with extra zaziki sauce on the side.
