Prepare the Filling

1. Cook the Meat or Beans

In a large skillet, heat the olive oil over medium heat. If using chicken or beef, add the ground meat to the skillet and cook until browned, about 6-8 minutes, breaking it up with a spatula. If using black beans, skip to the next step.

2. Add Vegetables and Seasoning

Add the diced onion and bell pepper to the skillet with the cooked meat (or just the beans). Stir in the taco seasoning and cook for an additional 3-4 minutes until the vegetables are tender and the spices are well combined.

3. Warm the Tortillas

In a separate skillet, heat the corn tortillas over medium heat for about 1-2 minutes on each side until warm and pliable. Keep them warm by wrapping them in a clean kitchen towel.

Assemble the Tacos

4. Fill and Top

Take a warm tortilla and add a generous scoop of the filling. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and sliced jalapeños to taste.
