Prepare the Filling
1. Cook the Meat or Beans
In a large skillet, heat the olive oil over medium heat. If using chicken or beef, add the ground meat to the skillet and cook until browned, about 6-8 minutes, breaking it up with a spatula. If using black beans, skip to the next step.

In a separate skillet, heat the corn tortillas over medium heat for about 1-2 minutes on each side until warm and pliable. Keep them warm by wrapping them in a clean kitchen towel.
Assemble the Tacos
4. Fill and Top
Take a warm tortilla and add a generous scoop of the filling. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and sliced jalapeños to taste.
