Preparing the Meat

Mix the Meat
In a large bowl, combine ground beef, ground lamb, garlic powder, onion powder, ground cumin, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

Shape the Meat
Shape the meat mixture into oval patties or logs, ensuring they are compact and uniform in size.

Slice the Meat
Once cooked, remove the meat from the grill and let it rest for a few minutes. Slice thinly against the grain.
Preparing the Zaziki Sauce

Chill the Sauce
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Assembling the Gyro

Prepare the Pita
Warm the pita bread on the grill or in a skillet for a minute on each side to make it pliable.

Add the Fillings
Place a generous amount of sliced meat in the center of each pita. Top with lettuce, sliced onion, and a dollop of the prepared zaziki sauce.

Wrap and Serve
Fold the pita over the fillings, wrap with parchment paper if desired, and serve immediately with extra zaziki sauce on the side.
