Method
Prepare the Felafel

Soak the Garbanzo Beans
In a bowl, soak the garbanzo beans in water overnight. Ensure they are fully submerged.

Prepare the Mixture
Drain and rinse the soaked garbanzo beans. In a food processor, add the garbanzo beans, cracked wheat, chopped onion, minced garlic, chopped parsley, cumin powder, coriander powder, baking powder, salt, and black pepper. Pulse until you achieve a coarse mixture but not a puree.

Form the Felafel Balls
Using your hands, form the mixture into small balls or patties, about the size of a walnut. Place them on a tray or plate.

Heat the Oil
In a deep frying pan, heat the oil over medium heat until it reaches 350°F (175°C).

Fry the Felafel
Carefully drop the felafel balls into the hot oil in batches. Fry them until they are golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
Prepare the Zaziki Sauce

Combine Ingredients
In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped dill, and salt. Mix well until smooth.

Chill the Sauce
Cover the zaziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve

Plate the Felafel
Arrange the hot felafel on a serving plate and serve with a generous side of zaziki sauce for dipping.
