Cake Preparation
1. Melt Chocolate and Butter
In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.
2. Whisk Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolk until the mixture is light and fluffy.
3. Combine Mixtures
Slowly pour the melted chocolate and butter mixture into the egg mixture, whisking constantly to combine. Add in the vanilla extract and mix well.
4. Add Dry Ingredients
Gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.
5. Prepare Ramekins
Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.
6. Fill Ramekins
Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.
7. Bake
Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center remains soft.
8. Cool and Serve
Let the cakes cool for 1 minute before carefully inverting them onto serving plates. Serve immediately with a scoop of vanilla ice cream.
