Prepare the Tortilla
Heat a non-stick skillet over medium heat. Spread a thin layer of butter on one side of each flour tortilla.

Assemble the Quesadilla
Place one tortilla in the skillet, buttered side down. Evenly sprinkle the shredded cheese over the tortilla and top with the second tortilla, buttered side up.

Cook the Quesadilla
Cook the quesadilla for about 2-3 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla using a spatula and cook for another 2-3 minutes until the other side is golden and the cheese has melted.

Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream and salsa on the side.

Prepare the Potatoes
Wash and slice the potatoes into thin wedges or sticks, leaving the skin on for added texture.
