Preparing the Pork Jowl Paste

Add Pork
Cut the pork jowl into chunks and add it to the pot. Brown the meat on all sides.

Season and Simmer
Add bay leaves, thyme, salt, and black pepper. Pour in the chicken broth, bring to a simmer, cover, and cook for about 2 hours until tender.

Blend the Mixture
Once the pork is tender, remove bay leaves. Use an immersion blender or transfer to a blender to puree until smooth. Adjust seasoning as necessary.
Making the Tortilla

Combine Dry Ingredients
In a mixing bowl, combine flour, salt, and baking powder.

Add Wet Ingredients
Add water and olive oil to the dry ingredients. Mix until a dough forms.

Knead and Rest
Knead the dough on a floured surface for about 5 minutes. Cover and let it rest for 30 minutes.

Roll and Cook Tortillas
Divide the dough into small balls, roll them out into thin circles, and cook on a hot skillet for 1-2 minutes on each side until lightly browned.
