Boil the potatoes until tender, peel, and mash them. In a pan, heat some oil and add cumin seeds. Once they crackle, add onions and sauté until golden. Add ginger, green chili, and the mashed potatoes along with peas, coriander powder, garam masala, salt, and cilantro. Mix well and cook for a few minutes. Let the filling cool.

In a large bowl, combine all-purpose flour and a pinch of salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 30 minutes.

Shape the Samoosas
Divide the dough into small balls. Roll each ball into a thin oval. Cut it in half to form two semi-circles. Take one semi-circle, form a cone by folding it, and seal the edge with water. Fill the cone with the potato filling and seal the open edges by pressing them together.

Heat oil in a deep pan for frying. Once hot, carefully add the filled samoosas and fry until they turn golden brown and crispy. Drain on paper towels.
