Sear the Oxtails
In a large pot, heat the vegetable oil over medium-high heat. Season the oxtails with salt and black pepper, then add them to the pot. Sear on all sides until browned, about 10-15 minutes. Remove the oxtails and set aside.
Add Remaining Ingredients
Stir in the diced tomatoes, beef broth, bay leaves, thyme, and allspice. Return the oxtails to the pot and bring the mixture to a boil.
Simmer the Stew
Reduce the heat to low, cover, and let the stew simmer for about 2.5 to 3 hours until the oxtails are tender and the meat is falling off the bone.
Serve
Remove the bay leaves, adjust seasoning with salt and pepper if needed. Serve the oxtail stew hot with rice or fufu.
