Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, salt, and ground cardamom. Whisk together until well mixed.

Form the Dough
Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms. Do not overmix.

Let the Dough Rest
Cover the bowl with a clean cloth and let the dough rest for about 30 minutes.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat until hot (about 350°F or 175°C).

Shape the Mandazi
On a floured surface, roll out the dough to about 1/2 inch thickness. Cut into desired shapes (triangles, circles, or squares).

Carefully drop the cut dough pieces into the hot oil, frying in batches until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
