Prepare the Goat Meat

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

Add Aromatics

Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Brown the Meat

Add the goat meat to the pot and cook until browned on all sides, about 8-10 minutes.

Add Vegetables and Spices

Stir in the chopped tomatoes, green bell pepper, carrots, curry powder, salt, black pepper, and bay leaves. Mix well.

Simmer

Pour in the water or broth, bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the meat is tender.

Serve

Remove from heat and let sit for a few minutes before serving. Enjoy the stew with nsima or Jellof rice.
