Suxhuk (Sausage)

Leçenik (Cornbread)

Method

Suxhuk (Sausage)

  1. 1

    Prepare the Meat Mixture

In a large mixing bowl, combine the ground veal and ground beef. Add the minced garlic, paprika, cumin, salt, black pepper, and red pepper flakes. Mix well until all ingredients are fully incorporated.

  2. 2

    Stuff the Sausages

Soak the sausage casings in water for about 30 minutes. Rinse them out and place one end of the casing onto a sausage stuffer. Stuff the meat mixture into the casing, being careful not to overstuff. Twist into 3 equal pieces and tie off the ends.

  3. 3

    Grill the Sausages

Preheat a grill to medium-high heat. Grill the sausages for about 10-15 minutes, turning occasionally, until cooked through and browned on all sides.

Leçenik (Cornbread)

  1. 4

    Preheat the Oven

Preheat your oven to 180°C (350°F).

  2. 5

    Mix the Dry Ingredients

In a large bowl, combine the cornmeal, baking powder, and salt. Mix well.

  3. 6

    Prepare the Wet Ingredients

In another bowl, whisk together the eggs, milk, and olive oil. Stir in the chopped spinach and all three types of cheese.

  4. 7

    Combine and Bake

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Pour the mixture into a greased baking dish and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.

Pepper Sauce

  1. 8

    Prepare the Ingredients

Roast the red bell peppers until charred, then peel and chop them. Mince the garlic.

  2. 9

    Blend the Sauce

In a blender, combine the roasted red peppers, minced garlic, olive oil, and red wine vinegar. Blend until smooth. Season with salt and black pepper to taste.
