Method

Preparing the Veal Rolls

    Prepare the Veal

    Flatten the veal filet mignon pieces using a meat mallet until they are about 1/4 inch thick.

    Assemble the Rolls

    Place a slice of smoked meat and a slice of cheese on each flattened veal piece. Roll them tightly and secure with toothpicks.

    Coat the Rolls

    Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Dredge each roll in flour, dip in egg, and coat with breadcrumbs.

Cooking the Veal Rolls

    Heat the Oil

    In a large frying pan, heat enough oil over medium-high heat to submerge half of the rolls.

    Fry the Rolls

    Carefully add the breaded veal rolls to the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Baking the Potatoes

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the potatoes, then pierce them with a fork several times.

    Rub the potatoes with olive oil, salt, and pepper. Place them directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until tender.

    Wash and chop the seasonal vegetables into bite-sized pieces.
