Cookie Preparation

Creaming the Butter and Sugar
In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy.

Adding Egg Yolks and Vanilla
Add the egg yolks and vanilla extract to the creamed mixture, mixing well until fully combined.

Incorporating Dry Ingredients
In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add this mixture to the wet ingredients, mixing until a soft dough forms.

Shaping the Cookies
Take small portions of dough and shape them into small oval or round cookies, placing them on a baking sheet lined with parchment paper.

Preheat the oven to 350°F (175°C). Bake the cookies for 15-20 minutes, or until they are lightly golden around the edges.

Making the Syrup
In a saucepan, combine water and granulated sugar. Bring to a boil over medium heat, stirring until the sugar has dissolved.

Adding Lemon Flavor
Once boiling, reduce heat and add lemon juice and lemon zest. Simmer the syrup for an additional 5-7 minutes, then remove from heat.

Soaking the Cookies
Allow the cookies to cool slightly before placing them in the warm syrup. Let them soak for a few minutes on each side until they absorb the syrup.
