Roasting Peppers

Prepare the Peppers
Preheat your oven to 450°F (230°C). Cut the red bell peppers in half, remove seeds, and place them skin-side up on a baking sheet.

Season the Peppers
Drizzle olive oil over the peppers and sprinkle with salt, black pepper, and minced garlic cloves.

Roast the Peppers
Roast in the preheated oven for about 20-25 minutes, or until the skins are blistered and charred.

Cool and Peel
Remove the tray from the oven and let the peppers cool for a few minutes. Once cool enough to handle, peel the skins off the peppers.

Blend the Cheese Mixture
In a large mixing bowl, combine the roasted peppers, cream cheese, cheddar cheese, parmesan cheese, and sour cream.

Mix Thoroughly
Use a hand mixer or food processor to blend the ingredients until smooth and creamy. Make sure there are no chunks of peppers left.

Add Chives
Stir in the chopped chives until evenly distributed throughout the dip.

Transfer the pepper dip to a serving bowl and garnish with fresh parsley and a sprinkle of red pepper flakes.
