Cornbread Preparation

Preheat the Oven
Preheat your oven to 400°F (200°C). Grease a 9x9 inch baking dish or line it with parchment paper.

Combine Dry Ingredients
In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, and salt until well combined.

Combine Mixtures
Pour the wet mixture into the dry ingredients. Stir gently until just combined.

Add Spinach and Cheese
Fold in the chopped spinach, feta cheese, mozzarella cheese, and Parmesan cheese until evenly distributed.

Bake the Cornbread
Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Pepper Sauce Preparation

Prepare the Peppers
If using fresh red bell peppers, roast them over an open flame or in the oven until charred. Allow to cool, then peel and seed. If using jarred roasted peppers, just drain them.

Taste the sauce and adjust the seasoning by adding more salt or pepper as needed.
