Preparation

Prepare the Liver

1. Clean and Slice the Liver

Rinse the beef liver under cold water and pat it dry with paper towels. Slice the liver into 1/2-inch thick pieces.

2. Season the Liver

In a bowl, combine the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the olive oil over the liver slices and coat them with the spice mixture. Let them marinate for at least 30 minutes.

Prepare the Grilled Vegetables

Wash and cut the zucchini, bell pepper, and red onion into bite-sized pieces.

4. Season the Vegetables

In a bowl, toss the chopped vegetables with olive oil, salt, black pepper, and dried oregano until evenly coated.

Grill the Liver and Vegetables

Preheat your grill to medium-high heat.
