Method

For the Grilled Branzino

    Prepare the Fish

    Clean the branzino fish thoroughly, removing scales and entrails. Rinse under cold water and pat dry with paper towels.

    Season the Fish

    In a small bowl, mix olive oil, minced garlic, chopped parsley, salt, and black pepper. Rub this mixture inside the cavity and on the skin of the fish.

    Stuff the Fish

    Slice one lemon into rounds and place them inside the cavity of each fish, along with any remaining parsley.

    Grill the Fish

    Preheat the grill to medium-high heat. Place the fish on the grill and cook for about 6-8 minutes per side or until the flesh is flaky and the skin is crispy.

For the Baked Potatoes

    Prep the Potatoes

    Preheat the oven to 425°F (220°C). Scrub the russet potatoes under cold water and pierce them several times with a fork.

    Bake the Potatoes

    Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes until tender.

    While the potatoes are baking, chop the chives and set aside. Prepare butter and sour cream for serving.

    Wash and slice the zucchini, bell peppers, and red onion into even-sized pieces.

    Season the Vegetables

    In a large bowl, toss the vegetables with olive oil, salt, and black pepper until evenly coated.

    Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.
