For the Grilled Branzino

Prepare the Fish
Clean the branzino fish thoroughly, removing scales and entrails. Rinse under cold water and pat dry with paper towels.

Season the Fish
In a small bowl, mix olive oil, minced garlic, chopped parsley, salt, and black pepper. Rub this mixture inside the cavity and on the skin of the fish.

Prepare Toppings
While the potatoes are baking, chop the chives and set aside. Prepare butter and sour cream for serving.

Prep the Vegetables
Wash and slice the zucchini, bell peppers, and red onion into even-sized pieces.

Season the Vegetables
In a large bowl, toss the vegetables with olive oil, salt, and black pepper until evenly coated.

Grill the Vegetables
Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.
