Pastry Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water, olive oil, and vinegar while mixing until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Cook the Beef Filling

    In a skillet over medium heat, add a little olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for another minute. Stir in ground beef, paprika, salt, and black pepper. Cook until beef is browned and fully cooked, about 7-10 minutes. Remove from heat and let cool slightly. If using feta, mix in crumbled feta and chopped parsley.

Burek Assembly

    Roll out the Dough

    After the dough has rested, divide it into 4 equal parts. Roll out each part into a thin sheet (about 1/8 inch thick) on a floured surface.

    Fill and Fold

    Take one sheet of rolled dough, and place a portion of filling along one edge. Roll the dough over the filling to form a log, tucking in the sides as you go to seal the filling. Place the rolled burek on a greased baking sheet.

    Repeat

    Repeat the rolling, filling, and folding process with the remaining dough and filling.

Baking

    Prepare Egg Wash

    In a small bowl, whisk together the egg and milk. Brush the egg wash over each burek to give it a golden color when baked.

    Bake

    Preheat the oven to 375°F (190°C). Bake the bureks for 30-35 minutes, or until they are golden brown and flaky.

    Serve

    Remove from the oven and let cool slightly before serving. Enjoy your delicious burek warm!
