    Prepare the Peppers

    Preheat your oven to 375°F (190°C). Cut the tops off the poblano peppers and remove the seeds and membranes.

    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent. Add ground beef, cooking until browned. Stir in cooked rice, chili powder, cumin, salt, and black pepper. Mix well and remove from heat.

    Stuff the Peppers

    Stuff each poblano pepper with the beef and rice mixture. Place them in a baking dish.

    Add Sauce and Cheese

    Pour enchilada sauce over the stuffed peppers and sprinkle shredded cheese on top.

    Bake

    Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from oven, let cool for a few minutes, and serve with sour cream on the side.
