Pork Belly and Pickles

    Cook the Pork Belly

    Preheat your oven to 300°F (150°C). Season the pork belly with salt, honey, and chipotle powder. Place it in a baking dish, cover with foil, and roast for about 3 hours, or until tender.

    Prepare the Pickles

    While the pork is cooking, slice the red onion and carrot into thin strips. In a small saucepan, combine the white vinegar, sugar, and water. Bring to a boil and stir until sugar dissolves. Pour the hot mixture over the sliced vegetables in a jar, and let them pickle at room temperature for at least 30 minutes.

    Finish the Pork

    After 3 hours, increase the oven temperature to 400°F (200°C). Remove the foil and roast for an additional 20-30 minutes until the skin is crispy. Let the pork belly rest for 10 minutes before slicing.

    Serve the sliced pork belly with the pickled red onion and carrot on the side.
