Prepare the Grouper
Pat the grouper fillets dry with paper towels. Rub the blackening spice evenly over both sides of each fillet.

Cook the Fish
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned grouper fillets. Cook for about 3-4 minutes on each side until the fish is blackened and cooked through.

Prepare the Buns
While the fish is cooking, slice the brioche buns in half and toast them lightly on a skillet or in a toaster.

Assemble the Sandwich
On the bottom half of each toasted brioche bun, layer romaine lettuce, a slice of tomato, and a generous spoonful of Sauce Louie. Place the blackened grouper fillet on top and cover with the top half of the bun.

Serve
Serve the blackened grouper sandwiches immediately with additional Sauce Louie on the side if desired.
