    Begin by rinsing the turkey brisket under cold water and patting it dry with paper towels. Trim any excess fat from the brisket for a leaner dish.

    In a small bowl, combine the salt, black pepper, paprika, dried thyme, and brown sugar. Rub this mixture evenly over the entire surface of the turkey brisket.

    In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and translucent, about 5 minutes.
