Directions

  1. 1

    Prepare the Ribs

Start by removing the membrane from the back of the pork ribs. This will help the seasonings penetrate the meat better.

  2. 2

    Make the Dry Rub

In a bowl, mix together brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper to create the dry rub.

  3. 3

    Apply the Rub

Generously apply the dry rub all over the ribs, ensuring that both sides are well coated. Let the ribs marinate for at least 1 hour, preferably overnight in the refrigerator.

  4. 4

    Prepare the Smoker

Soak the wood chips in water for at least 30 minutes before cooking. This will help generate smoke without burning too quickly.

  5. 5

    Preheat the Smoker

Preheat your smoker to a temperature of 225°F (107°C). Once it's ready, add the soaked wood chips to the smoker box.

  6. 6

    Smoke the Ribs

Place the ribs on the smoker grates bone-side down. Close the lid and smoke for about 4-5 hours, maintaining a consistent temperature. After 2 hours, spritz the ribs with apple cider vinegar every hour to keep them moist.

  7. 7

    Glaze the Ribs

In the last 30 minutes of smoking, brush the ribs with your favorite BBQ sauce and allow it to caramelize.

  8. 8

    Check for Doneness

The ribs are done when the meat is tender and has pulled back from the bones. You can also check the internal temperature, which should be around 190°F (88°C).

  9. 9

    Rest and Serve

Remove the ribs from the smoker and let them rest for about 10-15 minutes before slicing. Serve with additional BBQ sauce on the side.
