Brewing Process

    Mashing

    In a large brew kettle, heat 10 liters of water to approximately 160°F (71°C). Add 5 cups of Pilsner malt and 0.5 cups of Caramel malt. Stir well to prevent clumping.

    Sparging

    After mashing for about 60 minutes, sparge the grain with additional hot water to collect about 7 liters of wort in the kettle.

    Boiling

    Bring the wort to a boil and add 1 oz of Saaz hops. Boil for 60 minutes, adding 0.5 oz of Hallertau hops during the last 15 minutes of the boil.

    Cooling

    After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermenter. Add the yeast (lager) and seal the fermenter with an airlock. Allow it to ferment in a cool place (around 50°F to 55°F or 10°C to 13°C) for 2-3 weeks.

    Bottling

    After fermentation is complete, prepare a priming solution by dissolving 3 oz of priming sugar in a small amount of boiling water. Add this solution to the bottling bucket and transfer the beer from the fermenter to the bottling bucket, mixing gently.

    Bottling and Conditioning

    Fill sanitized bottles with the beer, leaving some headspace at the top. Cap the bottles and store them at room temperature for 2-4 weeks to carbonate.
