Cooking Instructions

  1. 1

    Prepare the Marinade

In a small bowl, mix together the olive oil, minced garlic, chili powder, paprika, cayenne pepper, salt, black pepper, and lemon juice to create a marinate for the pork chops.

  2. 2

    Marinate the Pork Chops

Place the pork chops in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C) while the pork chops are marinating.

  4. 4

    Prepare the Vegetables

Chop the mixed vegetables into bite-sized pieces and place them in a large bowl. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.

  5. 5

    Roast the Vegetables

Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes or until they are tender and slightly caramelized.

  6. 6

    Cook the Pork Chops

While the vegetables are roasting, heat a skillet over medium-high heat. Remove the pork chops from the marinade and place them in the hot skillet. Cook for 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).

  7. 7

    Serve

Once the pork chops are cooked through, remove them from the skillet and let them rest for a few minutes. Serve alongside the roasted vegetables.
