    Start by trimming any excess fat from the brisket, leaving about a quarter inch of fat for flavor.

    Make the Spice Rub

    In a bowl, mix together the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, black pepper, and brown sugar. This will be your spice rub.

    Season the Brisket

    Rub the olive oil over the brisket to help the spice rub stick, then generously apply the spice rub over the entire brisket, ensuring it is evenly coated.

    Marinate

    Place the seasoned brisket in a large resealable plastic bag or a dish, pour the apple cider vinegar over it, seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight.
