    Prepare the Beans

    Rinse the dry navy beans under cold water. In a large pot, cover the beans with water and soak them overnight. Drain and set aside.

    Cook the Pork Belly

    In a large skillet over medium heat, add the pork belly and cook until browned and crispy, about 5-7 minutes. Remove from skillet, chop into small pieces, and set aside.

    Sauté Vegetables

    In the same skillet, add diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-5 minutes.

    Combine Ingredients

    In a large mixing bowl, combine the soaked beans, cooked pork belly, sautéed onion and garlic, brown sugar, ketchup, mustard, apple cider vinegar, smoked paprika, black pepper, and salt. Mix well.

    Transfer to Baking Dish

    Preheat your oven to 325°F (165°C). Transfer the bean mixture into a large baking dish and pour in 4 cups of water.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 2 to 2.5 hours, or until beans are tender.

    Final Touch

    Remove the foil and let it bake for an additional 30 minutes to thicken the sauce. Check for seasoning and adjust salt as needed.
