Prime Rib Cooking Instructions

    Preparation

    Preheat your oven to 450°F (232°C).

    Seasoning the Roast

    In a small bowl, mix together the kosher salt, black pepper, minced garlic, chopped fresh rosemary, and olive oil to create a paste.

    Applying the Seasoning

    Rub the seasoning paste all over the prime rib roast, making sure to cover all sides evenly.

    Roasting the Meat

    Place the seasoned roast on a rack in a roasting pan and insert it into the preheated oven. Roast for 20 minutes.

    Reducing Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue cooking until the internal temperature reaches your desired doneness (about 1.5-2 hours for medium rare, targeting 130°F/54°C).

    Resting the Roast

    Once done, remove the roast from the oven, cover it loosely with foil, and let it rest for at least 20 minutes to allow the juices to redistribute.

    Making the Gravy

    While the roast is resting, pour off some of the fat from the roasting pan and place it on the stove over medium heat. Add beef broth and red wine, scraping the bottom to deglaze. Simmer until slightly thickened.

    Slice the prime rib and serve with the gravy on the side.
