    Mashing the Grains

    Begin by heating 3 gallons of water to approximately 165°F (74°C). Add the Pale Malt, Crystal Malt, and Caramel Malt to the water in a mash tun.

    Stir the grains well and maintain the temperature at 156°F (69°C) for 60 minutes. This process converts the starches in the grains to sugars.

    Sparging

    After mashing, drain the liquid (wort) from the mash tun into a brew kettle.

    Then, sparge the grains with 2 gallons of water heated to 170°F (77°C) to extract any remaining sugars.

    Boiling

    Bring the collected wort to a boil, then add the Cascade Hops.

    Boil for 60 minutes, adding the Centennial Hops in the last 15 minutes of the boil.

    Cooling the Wort

    Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermenter and pitch the yeast.

    Seal the fermenter with an airlock and let it ferment for 1-2 weeks at room temperature.

    Bottling

    After fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer.

    Bottle the beer in sanitized bottles and cap them. Allow the beer to carbonate for an additional 1-2 weeks.
