Crust
Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Form the crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Make sure it’s evenly spread.
Bake the crust
Bake in the preheated oven for 8-10 minutes, or until golden brown. Remove from the oven and let it cool.
Filling
Prepare the filling
In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and well blended.
Fill the crust
Pour the filling into the cooled pie crust, spreading it evenly.
Bake the pie
Bake in the oven at 350°F (175°C) for 15 minutes. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours to set.
Topping
Whip the cream
In a medium bowl, using an electric mixer, whip the heavy whipping cream and powdered sugar until soft peaks form.
Top the pie
Spread the whipped cream over the top of the chilled pie evenly. Sprinkle lime zest on top for garnish.
Serve
