Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Make the Breading
In a shallow dish, mix together cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper.

Coat the Catfish
Dip each fillet into the buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture, pressing gently to adhere.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking.

Fry the Catfish
Carefully add the coated fillets to the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Spread 2 tablespoons of remoulade sauce on the bottom half of each bun, then layer with lettuce, a fried catfish fillet, tomato slices, pickles, and top with the other half of the bun.

Serve the catfish sandwiches warm with additional remoulade on the side if desired.
