    Prepare the Brisket

    Start by trimming the brisket to remove excess fat. Leave about 1/4 inch of fat for flavor.

    Season the Brisket

    In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the brisket, ensuring it's evenly coated.

    Marinate the Brisket

    Place the seasoned brisket in a large zip-top bag or a dish. Pour the Worcestershire sauce over the brisket, seal or cover, and marinate in the refrigerator for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Sear the Brisket

    In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the brisket and sear on both sides until browned, about 4-5 minutes per side.

    Once the brisket is seared, remove it from the pot. Add the beef broth to the pot, scraping up any brown bits. Return the brisket to the pot and add the rosemary and thyme sprigs.
