Soaking the Beans

Rinse the dried navy beans under cold water to remove any debris. Place the beans in a large bowl and cover them with 4 cups of water. Let them soak overnight or for at least 6-8 hours.

Preparing the Beans

After soaking, drain the beans and rinse them again. Transfer the beans to a large pot and add 4 cups of fresh water. Bring the water to a boil over medium-high heat, then reduce the heat to low. Cover and simmer the beans for about 1 hour or until they are tender.

Preheat your oven to 325°F (165°C).

Combining Ingredients

In a large mixing bowl, combine the cooked beans, chopped onion, molasses, brown sugar, ketchup, mustard powder, salt, black pepper, and smoked paprika. If using, chop the bacon and add it to the mixture.

Baking the Beans

Transfer the bean mixture to a large baking dish. Cover the dish with aluminum foil and bake in the preheated oven for 1 hour. After 1 hour, remove the foil and bake for an additional 30 minutes, allowing the top to caramelize slightly.
