Preparation

  1. 1

    Prepare the Farro

Rinse the farro under cold water. In a pot, combine farro with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until tender. Drain and set aside.

  2. 2

    Roast the Beets

Preheat your oven to 400°F (200°C). Wrap the red beets in foil and roast in the oven for about 45-60 minutes, until tender. Allow to cool, then peel and dice.

Cooking

  1. 3

    Wood-fire Roast the Broccoli

In a large bowl, toss broccoli florets with olive oil, salt, and black pepper. Place on a grill or a wood-fire oven and roast for about 10-15 minutes, until slightly charred and tender.

  2. 4

    Combine Ingredients

In a large serving bowl, combine the roasted broccoli, diced beets, cooked farro, and chopped hazelnuts. Drizzle with lemon juice and toss gently to combine.
